The biggest rookie mistakes, and easily avoidable mistake with the right tools, are bowed cutting boards, poor sanding, glue up mistakes, and incorrect finish.

  1. Bowed Cutting board: If you get a cutting board and set it on the counter top, it should lay flat. A 12″x 13″ piece of wood made correctly should not have an uneven shape. the typical causes of bowing is not running the wood through a planer, excessive or improper clamping during glue ups, and using wood with a high moisture content.
  2. Poor Sanding: Improper sanding can cause an uneven board surface(you can test this to by seeing if water pools in spots), and not using a high enough grit of sandpaper. If the board doesn’t feel smoother than a babies cheek, its not sanded good enough. You should also never get a splinter from a cutting board.
  3. Glue Ups: One of the current trends in cutting boards is gluing contrasting wood types together for a striped pattern. It looks great until you notice that the maker didn’t have a good straight edge on one of the boards so you can see the glue in a joint.
  4. Finishing Problems: Make the board and use an appropriate finish. Walrus oil is great, shellac or varnish is not. Cutting boards are used for food so always ask and make sure a non toxic finish was used.
